Bell Pupper's Stuffing

OK I made a double batch of this and I basically make it up - so adjust to spice level or whatever you like.  I think this would be good with a fried egg, or stuffed in peppers, or eaten alone (this is what I do a lot).  This freezes really well, so it is a good thing to have in your freezer for when shit goes bonkers.

Ingredient's for double batch:

2 Heads of Cauliflower
1lb grass fed ground beef
1lb ground lamb
1 Onion
1 Cup Organic Chicken broth
1 Large Can of whole tomatoes
4 Garlic cloves
Sea Salt
Black Pepper
Red Pepper
Cayenne Pepper
Thyme

Olive Oil
Cumin
Cilantro
Tomato Sauce

Dice and saute the onion, while that is happening, rice your cauliflower (either grate in a Cuisinart or cut real fine).  Throw the meat in with the onion.  Large Pan - saute your 'rice' in olive oil, add your spices and garlic, chop up your tomatoes and add them, add the chicken broth (could be omitted).  When the meat is brown add this, now taste it (hopefully this isn't your first time tasting), add what it needs.  Simmer until liquid is absorbed (20 minutes or so).
Cooking it all up - I don't own fancy pans or a fancy stove - just make it work - :)

Finished product - this took about an hour - but time could be reduced - I was cleaning and going through jeans and whatnot (please say this word like Stewy would).

I froze half of this, ate a bowl, and put the rest in the fridge!  Yummy!

Paleo Pants Party

The official start to the Paleo Challenge is the 2nd of Jan, but I am doing some prep work, next weekend I have drill so I prepped some food for it.  This meal is actually the stuffing to stuffed bell peppers, but would be fine on its own, with a salad, or with an egg added.  I'll post the recipe in the next blog and some pictures, this blog is to tell everyone what I am calling my paleo challenge - Paleo Pants Party!!!  Why?  Well, let me tell you.  This morning I decided to take Layla to the dog park, she isn't feeling well, that's another story, it is really muddy so I grabbed an old pair of my 'fat' jeans, and let me tell you they are tight, like uncomfortably tight, when I got home I started cooking and when I cook I think.  I remembered when I bought this pair of jeans, they were kind of loose and I promised myself that these would be the biggest 'fat' pants I would ever buy - EVER - well they haven't been and this led me to my closet to pull out my progressive 'fat' jeans and a couple pairs of my skinny jeans - regrettably I couldn't find my skinniest jeans I know I haven't given them away, so when I find them I'll post a picture of them.  I will never fit into those again and in fact if I do someone needs to call the mental hospital for me.  I wore them when I was 22 and my diet consisted of Marlboro Lights, Anna's Espresso, and alcohol (don't judge me) - giggle, oops I digressed a bit.
What I plan on doing is every Sunday as I prepare meals for the week I will try on all four of the jeans and wear the one that fits the best - I'll post a picture (hopefully I get better at the picture taking) - but here is a picture with me in my 'fat' jeans and I am about to die in it - seriously.

First Post

My goal is to blog about 30 days of eating paleo, my puppy training, and a list of goals I would like to achieve.  I'm stealing the list of goals idea from a friend it is 101 things in 1001 days, I'm still working on that list and will publish it at the first of the year.
Jan 2 is when the strict paleo eating starts, I will post my food and hopefully pictures (of the food, not of me).
Jan 4 is when the puppy classes start.

A little about me, I like to think positively, but honestly, so here is the truth.  I'm out of shape, 2010 was a rough year, just very topsy-turvy.  I got a puppy to teach me a few things about relationships and trust, so this next year I want to get back in shape and learn as much as I can from my puppy, Layla.

Sorry for the demon eyes on the puppy, I'm not sure how to edit that, I have a bunch to learn.

Layla is sleeping now, she has had a busy day, dog park and then shots, she is worn out and she is still has much to do as she is going to visit her friend Chang tonight!
