Bell Pupper's Stuffing

OK I made a double batch of this and I basically make it up - so adjust to spice level or whatever you like.  I think this would be good with a fried egg, or stuffed in peppers, or eaten alone (this is what I do a lot).  This freezes really well, so it is a good thing to have in your freezer for when shit goes bonkers.

Ingredient's for double batch:

2 Heads of Cauliflower
1lb grass fed ground beef
1lb ground lamb
1 Onion
1 Cup Organic Chicken broth
1 Large Can of whole tomatoes
4 Garlic cloves
Sea Salt
Black Pepper
Red Pepper
Cayenne Pepper
Thyme

Olive Oil
Cumin
Cilantro
Tomato Sauce

Dice and saute the onion, while that is happening, rice your cauliflower (either grate in a Cuisinart or cut real fine).  Throw the meat in with the onion.  Large Pan - saute your 'rice' in olive oil, add your spices and garlic, chop up your tomatoes and add them, add the chicken broth (could be omitted).  When the meat is brown add this, now taste it (hopefully this isn't your first time tasting), add what it needs.  Simmer until liquid is absorbed (20 minutes or so).
Cooking it all up - I don't own fancy pans or a fancy stove - just make it work - :)

Finished product - this took about an hour - but time could be reduced - I was cleaning and going through jeans and whatnot (please say this word like Stewy would).

I froze half of this, ate a bowl, and put the rest in the fridge!  Yummy!
